These fritters aren't as good as Honey's, but they're still pretty damn good! I fried them up last night when I woke up at 3am with a sweet tooth and noticed that I still had one apple left from the several that I had bought from Mary Ann's fruit stand a few days before.

- In a small mixing bowl, combine 1/2 cup oatmeal, 1/4 cup wheat flour, 1/4 cup nut or soy flour, 1/4 cup biscuit mix, 1/2 cup sugar, and lots of cinnamon
- Mix in one egg, 1/4 cup olive oil, and just enough water to bring to a thick batter
- Add one peeled and diced apple

DeleteI can cook just about anything out here, and I've had many wonderful meals. I have a two-burner gas stove, a charcoal grill, an open fire pit with a grate, and a small stove-top camp oven. The camp oven is pretty limited, so baking is the only thing that's challenging. The oven is small and the heat doesn't circulate well, so I only bake things like cookies and biscuits and such. No lasagna or other such deep dishes that require a long bake time.
I also have to manage my left-overs carefully, especially during Summer, since I have no refrigeration. But that's not really a problem. I shop for one meal at a time and plan the quantities carefully so that I avoid left-overs altogether.
Great that you can cook such a lot! Is there a river or stream nearby? When I went camping with the Boy Scouts, we used to keep our milk and some other things cold by keeping them in the running water. Not perfect, but it worked.
